Charcoal.. what a difference!!

My first cook last month on my WSM 18.5" used Kingsford and it lasted me through the whole cook with steady temp at 225F about 10 hrs (about 1/3 unlit charcoal left in the basket) basket is 12" tall.. holds a little over 10 pounds of charcoal.

This time around , I thought I gave Red Oak "Embers" a try since it was cheap ($5.99 for a 17lb bag).. these burn hotter initially around 300F, this is with a Brinkman charcoal pan full of hot water.. finally got it down to 250F and would you believe I ran out of fuel around the 10 hr mark...

I think the Embers brand should be used for poultry but no for long cooks over 8-9 hours. Lesson learned as well as the pain of adding more coal to the fire!!!
