Center cut spare ribs

Hello everyone! I have a question regarding certain cuts of ribs.

When I go to the grocery store to look for side ribs, all I can ever find are Center Cut Side Ribs. I was wondering, what is a center cut, is it another name for St Louis Cut? If not, whats the difference?

We get full spares, side ribs centre cut removed, side ribs breast bone off, and centre cut.
I find the centre cut shorter than if you trimmed them St. Louis yourself. More the size of a back rib. Then they sell the side ribs centre cut removed for a buck cheaper per pound and they still have some of the ribs on them.

There will maybe just be a small flap of meat at the end of the rack that you may want to trim, but its all done for you. Like you said just remove the membrane and bit of skirt meat.

Thanks for the replies Burt. You cleared up a big question mark for me

Because the racks are smaller in general, do they still require the same cooking length as normal sides? Or do they cook quicker like back ribs?

Thanks again!

BTW: It's funny that you replied to my posts. We both live in Hamilton, lol. Small world.

I think they cook a bit quicker than the longer trimmed St. Louis sides, but I don't really ever pay much attention to the time, just when they're done, they're done...
