Toasting up some bolillos with some garlic butter and provolone cheese added

My plate. My sammie had the garlic provolone bolillo with chipotle mayo, lettuce, tomato, carne asada, ham, eggs, avocado, salsa and some cotija cheese.

Wow looks terrific!! Very nice!
I wish I could find meaty beef ribs like that around here. Those look awesome. Can't wait to see what they look like cooked.
 
Delicious! I love Mexican flavors.
So, what's a good method for cooking nopales? I've grilled as you did... then what? The cactus is a bit bland, so I usually slice and toss in a simple cilantro dressing for a warm nopales salad. Any better suggestions John?

My wife makes a salad that is really good. Simmer a pot of water then put some sliced nopales that are cut into strips and sliced onion in and simmer until the nopales are tender. Drain the nopales and onion well and add some diced tomato, diced jalapeno,chopped cilantro and some feta cheese. chill and serve
 
It looks real good John. New to me grilling cacti for sure. I wonder what I can find in the swamp to come close.
