Can You Say Pork Butt Jerky?

I put two butts on last night at 8:00 with a combined weight of almost 15 pounds. Temps had been holding at 230 for two hours before I went to bed. I had an electronic thermometer with an alarm. The smoker was set up 25 feet or so in back of our bedroom window and thinking that I am a light sleeper, I would have no problem hearing the alarm. 210 degrees at 5:00 this morning. I thought to myself, what a huge waste, but it is pretty good considering. Definitely drier than you might like with a lot more chewy bark. Time to get out the sauce.

On another note, does anybody have a recommendation for a wireless thermo? I don't want to spend a fortune, but enough to get something reliable.
