Can I pull my pork after it cools?

I have a buddy who loves my pulled pork. He wants me make some for him to take home to his family next weekend.

My problem is that I usually pull if after it has sat a few hours in the cooler.

He is wanting to head home around 2pm on Friday. So will have to cook in during the week.

If i start it right when I get home on Thursday I should be able to to pull it off the smoker, wrap it and place in the cooler before I head to work in the morning.

He will be leaving town around 2 and drive for 4 hrs. So it will probably be 7 or 8 before before he will be able to pull it.

Is that to long to wait?

Should we pull in the later morning and then repack it?

I usually eat it within 4 hrs of cooking it so I could use some advise.

Assuming you work normal hours, taking it off the smoker 7 AM-ish and waiting until 7 PM-ish to pull is a long time to safely hold it. Pulling it that morning, cooling it and safely keeping it cool may be challenging too.

I'd cook it a few days ahead of time, portion it how he wants and freeze it. If he wants to take some "fresh" pork home you could keep some in the fridge.
