My plan was to smoke a turkey later on today, But something came up that will be in the middle of my cook. So if I start it now, can I foil it and leave it in a towel lined cooler? If so, how long can I keep it in there?

I would not. Wait until you have time to do it right or just do it in the oven.

Actually you can. If you wrap it straight out of the cooker and hold as you note, you'll get at least a few hours. Pack well with towels. For the moistest breast hold breast side down. You will not have skin worth a damn but you won't holding breast up either so go for breast down.
