Butt Time Question (again)

Hey guys,

Been so long since I did two butts that I want to double check with the experts on timing.

Plan to have guests over tomorrow around 5pm. I've got two seperate butts in cryovac for a total of 14.01 llbs.

Rule of thumb as I recall is 1.5 to 2 hours per llb so we're looking at a cook that will take 14 hours on the long side. That's if I go purely by individual weight and not cuumulative weight of the pork shoulders.

When would you guys put these on?

I was thinking about putting the butts on tonight arounbd 10pm or so and just foiling and holding in the oven as necessary if they finish up too quickly tomorrow. Them buuts can be fickle sometimes as I recall with plateau times and what-not.

I'm also doing 3 racks of baby backs which I am comfortable with times wise.

I'd do what you're planning. The butts will hold--well-wrapped in foil then placed in a cooler with towels--for several hours.
