Butt Thaw Question

I took 16 lbs of Pork Butt (two roasts in original cyro. packaging) out of the freezer and put in fridge for 24 hours approximatively 48 hours prior to my needing it. At 24 hours I checked her and she was still very frozen . . . not rock solid but still frozen on the outside. I took her out of the fridge and placed her on top of the fridge at 12:00 a.m., with the intention of putting her back in the fridge at 6:00 a.m. Well, I remembered her at 9:30 a.m. Average temp in the garage (fridge is in garage) was probably around 55, she's soft to the touch on the outside but you can tell she's still frozen in the center. She was cold on the outside and I think I'm OK to smoke her tonight but wanted to get others opinion's, don't want to get anyone sick. Thanks in advance for your input.

No worries at all Larry, if it's still frozen on the inside, I do it all the time. When you put it back in the fridge it will equalize/thaw out pretty quick. HTH

Thanks guys. I was pretty sure I'd be OK due to the fact that it was in a cool garage, in-fact, I just checked the temp in the garage and at 11:00 a.m. she's only at 49 so overnight she was probably in the low 40s. I figure by this evening she should be totally thawed.
