Butt or shoulder


 
The Costco nearest me sells boneless shoulders, two per pack, about 7.5 lbs each. For at least 50 cents more per lb than a butt, when I can find any.
 
In Canada they're called Pork Shoulder Blade Roasts, or something like that. The other half is a Pork Shoulder Picnic IIRC.

I spent part of the day writing emails to friends which required the words "pork" and "torque" (not in the same sentence). Made for some interesting typos.

There's something wrong with this language

<taps head> bone structure is probably the definitive here ... if it's a 1/2 butt there will be a single bone, on a whole butt this bone is sort of the shape of 'trinity' if that makes sense. Anyway, there would be a single half of one of these bones. If it's a picnic lower half there will be a single tube shpaed bone, if it's a picnic upper half there would be a portion of the tube shaped bone connected to a joint ... a mass of cartiledge.
