Butt on!

Got a butt on the WSM about 45 minutes ago. It's been a while - I think August - since I cooked some butt. Feels good to be back. Smells good too.

I'll put some up tomorrow. Nothing but a closed up WSM with a frozen butt in it now.
 
Jim,
When you cook a butt from frozen, do you do anything different to make sure it cooks evenly? What temp do you cook it at?
 
Justin - I do the same thing I'd do w/ an unfrozen butt. Cook between 225 and 275. It just takes a little longer, that's all.

How do you apply rub to frozen butt?
(gasp... that wouldn't sound good taken out of context).

Ron, When I do my frozen butts,I slather them with mustard and apply my rub just like you would if they were unfrozen. I feel you get a much better smokering from doing it this way.

Exactly. I ran into a new hurdle last night. First layer of mustard was apparently too thin and it froze before I could get the rub on!

Things are chugging along. Woke at 7 to a 200 degree cooker and a 161 degree butt. Just added about 12 unlit and propped the door for a few minutes. We're back up to 210 and climbing.
 
Whew! It's been a long 24 hours. Got home last night - cut the lawn and power washed the swingset. Later, I started an overnight butt cook. Wife went out with our youngest this morning. When I asked my two year old what he wanted for lunch, he said "Hot Dog Fire!" Which is code for "hot dogs on the grill". So, with the scent of butt in the air (this is the only place I can say that without a funny look), I fired up the ol' gasser and cooked up some Ball Parks for lunch. The little guy was happy before he even started eating:

After a hot dog, some string cheese, and plenty of ketchup (or is it "catsup"?), he was even happier:

After lunch, Mommy came home, kids went down for naps, and I stained the swingset, as the butt continued it's 17 hour cook. It finally finished around 3:30. I double foiled, wrapped in a towel and rested it in a cooler while I finished the swingset and cleaned up. I was then able to enjoy the fruits of my labor for dinner:

At long last (just shy of 6pm), I plated this fine hunk of meat, with some Bastardized Piedmont sauce and all the sides a guy could want after a day in the warm, Spring sun:
