Butt All Rubbed Down and Nowhere to Go?

Got home from work yesterday and got my 9.5lb Boston butt all rubbed down, put in a ziplock bag and back in the fridge in anticipation of an overnight smoke. Problem is I walked out on my patio last night and wind was gusting to 25-30mph. I've learned from past experience I'm not even going to try to smoke in windy conditions.

So, how long can my BB stay in the fidge with the rub on it? Supposed to be windy all day today so it may be close to 72 hours until the wind dies down so I can smoke it (Yes I know...get a wind break). Does it negatively affect meat to sit with rub on for an extended amount of time? I'm tempted just to put it in the oven this time and next time check the darn forecast before planning a smoke.

I'd say you're good to go for a few days. Worst case make Buckboard Bacon with it.

...and remeber: it's not THAT the wind is blowing...it's WHAT the wind is blowin. :)
 
Not sure what kind of smoker you have but wind is number one reason to make your smoker mobile if possible. I've got a small wheeled potted plant dolly for our 18.5 WSM so I can easily roll it around and in and out of our garage and use our building for wind protection. It works great and the very first time I used our smoker was a cold windy day but I was able to shield the Weber with our garage.

I've never tried holding a rubbed butt in the fridge for any extended time. Depending on the amount of salt in the rub some say it can take on a hammy taste. If you do go the oven route I would suggest putting it on the WSM till you reach 140deg internal. If you run 250-275 with an empty foiled pan it usually takes me 4-5 hrs to get there.
At least you get some smoke flavour, before foiling and finishing in the oven.

I would never leave it rubbed for more than 24 hours. Never done it, but lots of posts on several sites say don't do it, so I don't.
 
Just put in on the smoker tomorrow and don't worry. Everything will be fine.
