Buffalo?

Has anyone tried cooking buffalo or know any sources for buying cuts of buffalo? I am interested in all kinds of cooks and methods not just low and slow for big cuts but also steaks.
 
My wife and I eat buffalo steaks more often than we eat beef steaks. Buffalo is widely available in Colorado - even Costco carries buffalo meat (ground only though I think). It does great, just like good beef does, with a simple salt and pepper seasoning.

We also make buffalo burgers with some regularity. Topped with roasted red peppers, swiss, onion, and avocado, they're pretty great.

Buffalo meat in general is like other game meat such as elk in that it fares better in a more rare application. For buffalo steaks or burgers i try not to take them too much above 115 degrees F.
 
I cook a lot of bison as well, and love it! I have a local source out here with a farm near by so it is pretty easy to come by. The same as Dave said though we do have it in all of the grocery stores here as well.

I don't use the high heat I would with beef. I usually don't go above 350 with it. Here are a couple pics of a bison brisket I did a while ago. Note if you cook one don't take it to the high internal temps you would with a beef brisket.

Buffalo meat is great. Usually quite lean and very flavourful.
Unfortunately where I am it is also very expensive so I really have to be a good boy for my wife to let me get some.
