Buckboard Bacon Cooking Question

The recipe listed at another part of this website describes the smoking process and it includes using the water pan. But, I use the ceramic terra cotta saucer, covered with foil, in place of the water pan and so are there any changes with the TVWBB's cooking/smoking process?
 
No major changes at all. You might notice that it takes a bit less fuel/fire to get up to temp. I fill my saucer with sand then foil for added stability.
