Ok, I did some ribs last week 12/11/05 and have about 1/2 of my rub left over I plan on doing more ribs next week 12/22/05 how long do you think this rub will stay good? I guess this is a span of about 11 days. The only variation I did was to kosher salt and I have been storing it in a stanless steel bowl covered.

The rub won't really go bad. Over a period of time the spices will lose flavor.

With that said, if you cross contaminate that rub then it will go bad asap if left at room temp. If the rub is kept clean, then it will be good to use.

Tip: If you have more rub then you know your going to need, then split it up. That way you don't have to worry about getting the whole thing contaminated. Only work with the amount your going to need.
