Brisket

Cooked a 12 1/2 lb Packer Brisket on the 18. Injected w/Beef Broth & Worcestershire Sauce, made a Homemade Beef Rub, salted before Rub with Kosher Salt. Cooked @250 for 10 Hours. Outdoor temperature was freezing & it was sleeting. I persevered & it turned out ok. I made myself a Sandwich & gave it all to my neighbor. I just enjoyed the entire process of cooking!!
Cooked over Hickory, wrapped in Butcher Paper & rested in cooler. Made a Batch of Homemade Sauce

Kemper,
The house next to me is up for sale, you want to move in!!! I want to see a ruler next to that sandwich, how tall was that thing? Six inches? I attempted to make as big of a sandwich with leftover brisket the only time I cooked one, but I don't think I got close to your height. I hope you are doing well and that the BBQ is at therapeutic of a process for you as it is for me!
