Cooked a 12 1/2 lb Packer Brisket on the 18. Injected w/Beef Broth & Worcestershire Sauce, made a Homemade Beef Rub, salted before Rub with Kosher Salt. Cooked @250 for 10 Hours. Outdoor temperature was freezing & it was sleeting. I persevered & it turned out ok. I made myself a Sandwich & gave it all to my neighbor. I just enjoyed the entire process of cooking!!
Cooked over Hickory, wrapped in Butcher Paper & rested in cooler. Made a Batch of Homemade Sauce
