going to attempt my first brisket in my 18 inch wsm. Kinda confused on what a packer is. does that just mean it has the flat and point? went to costco to see what they had and theirs were way smaller then what i saw at wallyworld. However both did have the flats and points. Is it just a size difference and both are considered packers? the costco one looked much more uniform in size. thanks
 
you have to ask the butcher. they have them in the back cooler and they are vacuume sealed in cryovac. I think they take those and trim them down and put them out. They were also over a dollar a lb cheaper.
 
Corey, you are correct. packers have the point and flat. I've used wallyworld packers before with success. Just try to pick one out that has good marbling and a thick flat especially at the tip
 
I've similar luck with Paul buying them at Walmart. So far it's the only piece of meat that I will buy from them, but they have been great in the past. Always cooked high heat of course, so can't comment on low and slow.
