brisket + ???


 
Hello to everyone out there in "smoker-land". I'm planning on smoking a brisket for the Carolina Cup this coming weekend for about 25 people in our tent site. My question is what else should/could I cook for that many people as a side dish(es)? I am considering baked beans, and possibly slaw. But I know half of the people there don't care for either (yes, they're strange). Any ideas? Thanks.
 
Potatoes...Mashed, fried, or baked.

Here you go. This one is from my buddy Bill Cannon who created Texas BBQ Rub. (You can leave the rub out and still produce a pretty great dish! I would highly recommend it for future cooks though!) We just cooked for over 800 folks at the Houston Livestock Show and Rodeo and had these as one of the sides. I also do them in my catering business. THey are very similar to a stuffed baked potato .
