Good Evening from chilly Wisconsin.

Well, I bought a 9 lb beef brisket on Saturday that I was going smoke on Sunday. Things came up and had to postpone. Right now it is in a non-air sealed plastic bag in the freezer. How long should I keep this in the freezer before smoking. Will it be good for a few weeks before getting bad? It is too big for a ziplock, its just in a tied plastic bag. Is this alright?
Thanks

Brad,

If you want to keep it for a few weeks, I would rewrap it tightly with heavy-duty aluminum foil or freezer paper (available at the grocery store), then put it back in an airtight plastic bag and squeeze out as much air as possible before tying. The goal is to keep air away from the surface of the meat to prevent freezer burn.

Regards,
Chris
