Brisket Rub


 
Well my neighbors and friends have said my best brisket was when I spred a layer of yellow mustard over it all, both sides, and then covered it in foil and let it sit over night in the fridge and then used TexasBB Rub on it the next day before I tossed it on. Boy is that stuff good! Hmmm, I've got to order some more soon. Can't get it around here dangit. Google Texas BBQ Rub and it will bring up their link.
Can't beat their gloves for handling hot food either.

I am doing a high heat brisket sunday.

For this, I'll use a light paste.

I'll puree 1/4 onion, several cloves of garlic, steak dust, EVOO, worsterschire, then season with chipotle seasoning, salt, pepper.

I apply it just before putting on. Again, it's a very light coat, and I only apply it to the flat. I deal with the point later.

High heat cooks don't generate heavy bark, so I opt for exterior flavor instead.
