I'm using a mustard based slather for my brisket which will be cooking tonight. It's on the stove now cooking. Do I apply it this morning and let it sit all day, or do I sprinkle on a rub for the day and then slather it just before I cook it?
I usually put a little rub into the slather, let the meat marinate in it for three to six or so hours. When I get ready to put it on the smoker, I put a thin coating of slather and a heavy rub on. It seems to work well for me.
