Brisket / Ribs at the Same time

I'm rethinking my decision to try brisket and ribs at the same time tonight. I want to eat at around 7pm and know the ribs will need to go on at roughly 3 to make that happen. Their temp will need to range from 225-275 to get the job done.

If it is 10:30 right now, do I have time to make a 5 lb brisket?

Brian, how many cookers are you planning on? Why the change of heart? Seems to me like you have plenty of time for both if you cook the brisket HH.

Brian, i cook pork spare's,bb , beef spares, beef short ribs, english ribs all at 275-300 range come out excellent. Just have little room for error that's the only draw back.

I think with a 5lb brisket you will not have a problem. I find that flats cook pretty quick and if you foil it around 160* or less it should be done early. If anything hold the brisket in a cooler while the ribs finish up. IMO your just fine. Roll with it! Vince
