Brisket Question, selection?

Went to local meat market and they had packaged brisket stamped "choice" from IBP in essentially a cryovac. Most weighed appx 8 lbs and were $3.99/lb. The fat cap and overall wt was a little less than i expected, but i've never purchased a brisket so not sure what to expect. Publix sells flats in my area, which i don't care for.

How is the price and overall, does this cut of meat what i should buy for my first brisket cook?

I think it is unlikely that is a whole brisket, the price is high, and I'd want bigger.

couldn't get the update to work

Orlando, fl.

guess i need to visit walmart superstore but open to other suggestions

I always try to find packers in the 8-9lb range. Not sure where you are at but the price seems a little steep but..I know that is not unheard of. I bought Wally IBP choice packers at 99 cents/lb to 1.50/lb for choice packers this summer. I usually chop up the whole packer when its done, as requested by guests...the 8 pound packer is perfect. At least its choice, I personally find it makes a better brisky than select. On your fat cap, I dont trim a thing. I do cut out the fat kernel between the fat and flat though. Fat cap down and let her rip. Let us know how it turns out.

ok, defin need to visit walmart. i didn't think this looked right. too expensive at $4/lb and not full enough. Still waiting for my new wsm, so i've got time, but ready to get on with it. thx for the tips

The Meat Emporium on OBT has been a good source for packers. I am not certain of their pricing other then it has not been unreasonable.
