Brisket pack date Jan.13

Last week I bought a Select brisket from Cash and Carry and noticed a "pack" date of Jan .13. Now I am 99% sure this is the date they slapped the price on it and not when it was cryovaced......then again maybe they did post the pack date from the case on the label.

We were supposed to have a party this weekend and I was going to smoke it up....due to weather we are postponing a week.

Will this brisket be ok in the cryovac another week? It will be like 32 days after the " pack" date....

You should be fine as long as your fridge keeps a constant temp below 36 degrees. I've kept them over 30 days after purchase with no problems. If it smells funky when you remove it from the cryovac that's pretty normal. Just give it a good rinse, pat dry and the odour should go away. Kevin Kruger, of the safety compilation fame, has kept them up to 6 months.
