I have a house-full o' kin this weekend, and I decided to smoke a bunch of meat. I picked up a brisket (just shy of 13#) and two Boston butts.
I kept temps 225-240 and used two chunks of hickory and two apple.
They went on about 5:30 a.m. yesterday:
I came home at lunch to check on their progress:
The brisket came off around 5:30 p.m. (though I cut the point off and put it back on for a bit) and the butts came off around 6:30 p.m.
The results were very good:
The brisket came out good, but the butts were, without a doubt, the best I have ever done.
Embarrassingly, this was the first time I ever cooked baked beans on the smoker. Seems like such a "duh" thing to do, I don't know why I haven't. They were so freakin' good. I don't think I'll be cooking them any other way in the future.
