Smoked a 3.5 lb Brisket Flat today. Turned out pretty good, however, I did get busy near end of the cook trying to multi-task and it stayed on grill a hair longer than I wanted. It was still really delicious though, just drier than the last one I made. Rubbed with Scott's Santa Maria Rub and some BBQ rub. Smoked with Hickory and Cherry.
