Brisket for 80

I am throwing a party this summer for 80. I have my pork butts already in the freezer. My question is how many whole packers would i need to feed 80? I always cook extra pork for people that want to take it home or have around for late night munchies so i an not concerned about how much pork i will cook. Should i plan on at least 3/4 lb per person of brisket or is that too much?
 
Its hard to say but that sounds about right? It really depends on how much of everything else they eat? you can never have enough, better to have more then to run out!!! You better start cooking them now! Good luck!

3/4 lb is on the high side IMO. How will you be serving the brisket; sliced, chopped, both? You can figure on a 60% yield of the precooked weight. Many caterers (that's your cue to chime in) figure on 1/4 lb of meat per person. So 35 lbs of precooked should be about enough for 80.
Other factors to think about is what else is being served; sides, etc.?

Sounds like you are serving both brisket AND pulled pork? I would say 30-35 lbs of each raw would be plenty! This would yield nearly 1/4 lb of each meat per person.
 
sounds about right - i will plan on 4 packers to cook with plenty extra for take home and late night hunger pains. I will be slicing the brisket.
 
crumbs, I figured a lot of this out last summer, and I was thinking of how valuable the info would be, now I'm wondering what I did with it all.

Anyways, I did 4 butts and two packers, along with some wings (most of the wings didn't get cooked and are still in my fridge, so count those out). I'll bet there were 50-60 people there and we barely dented the meat. I think we figured we could probably have served 100.

don't forget a couple pans of barbie's beans. I did two big pans of them before/during the party, it worked out great because I had the meat already done so I had tons of pork and beef bits to throw into them and people could come over and see and smell the wsm in action. Once again I made twice as much (we brought over a pan home).

are you planning on serving pork and beef or just beef?

did you see the application is up for Roc City Rib Fest? Its full KCBS this year, we're checking our schedule to see if we can make the trip.

is there camping near by? I assume you mean to camp on your site. We were thinking, if we go, to get a hotel room at the next exit south on the 390 (for the women and children, of course).
 
I have been thinking about going to the rib fest myself dont know if i would do the KCBS on sunday but would like to try saturdays comp.
