Brisket Cook


 
It's a catch 22. If you build a real fire, you'll commit a crime against beef but if you don't you suffer the smoke ring too.

If you have a kettle, you at least have the option of indirect, this kind of smoker forces smoke but it doesn't really let you cook that smoke into it.

It's not your ability that you need to second guess, it's just your smoker. Slabs unlike pork butt needs real heat, real fire, the pork butts cook awesome on the wsm but the slabs can be finicky. They need a good combo and a lot of air exchange. And I'm just talkin here like I would anyone.

I'm nobody but I do smoke a lot of slabs. That might go on my headstone. ;)
