Brisket Cook

Hello all, Im going to cook a brisket on the WSM. I have noticed that under the cooking topics, it looks like most of the pictures (like for the midnight cook) there is only the flat. It says its going to take about 12 hours. If Im going to cook a brisket with a a point, should I expect it to take longer. Im planning on putting the tip back on for burnt ends. Also, is it more common to find only flats or the flats with the points still attached?

My friend the briskets in the Midnight cook are indeed packers (point and flat), in-fact the High heat, Smoked & Oven Finished and Wet Rub are all packers, didn't see a flat in the bunch. So, times are going to be accurate for your packer.

In terms of what's more common, I think it depends on where you live and shop. For me in Central Cali it's tough to find flats, which is great as I prefer packers.

Ah, great! I just moved from Boston out to Az. When I was at home, I usually only found flats, which I only cooked once. Im hoping out here in the desert I find the full packers.

Albertson's and Walmart are the only places in Chandler that I have found whole packers. They have trimmed flats at Costco. I've heard Sam's Club has packers, but I'm not a member. Last month I was looking at them at one Walmart and they only had one, it was $2.99/lb. I went to another Walmart three miles away and they had about 7 or 8 to choose from, all at $2.18/lb. Albertson's will be closer to $4/lb, but watch for sales there. I've picked up Choice packers there for $1.99/lb on occasion.
 
Cool Ethan, I picked up a packer at Walmart for $2.??/lb (cant remember). Im going to put it on the WSM in about 90 minutes. I Will let you know how it is.
