Brisket Cook Time Question

I just checked it and it was a little higher temperature than I expected. 208. Seems nice and tender. I’m going to take it off, wrap it in a towel and let it rest.

seemed to be pretty juicy.. I ended up sticking the probe thermometer in too far and punching a small hole through the bottom of the foil. Managed to drip juices on my foot carrying in LOL

Ok. Rested for 4 hours and then I sliced her up. Still moist but I would have liked a slightly better smoke ring. Ended up being absolutely amazing. Everyone loved it. Thanks again for all the helpful advice! Finished product is below.
