Ok, I am getting ready to try my WSM for the first time tomorrow. I have everything set and just need to prepare the meet. My only question is timing this baby.

I want brisket and my wife wants chicken, so I have one brisket and 2 chickens to cook. What is the best methond to do this? I know the brisket is going to take a lot longer, so should I put it on the top rack and then add the chicken much later or what?

Any advice appreciated!
Wendell

Yes, I would put the brisket on the top grate and cook it there until I was ready to add the chickens. Then I would add the chickens to the bottom grate. Most folks don't like chicken dripping on their other BBQ meats.

Have fun,
Chris
