Just finished canning a small batch. Couldn't find my old recipe, but this one was very close. I ended up a quart short on cukes and onions and plenty of the brine left over. Next time, it'll be 5# of cukes and an extra onion.

That’s a nice batch of pickles! I did a couple jars the other day but I don’t can them. I just put them in jars and refrigerate. I use Chef John’s recipe.

With the garden producing now, the fridges stays full of goodies waiting to be canned or fermented. Much easier to find room to store canned stuff around here.
