Branzino and potatoes

Today we decided to give our first full fish a go on the grill. I've grilled tons of filets of fish in the past, however never done a full fish. We headed over to the local fish market and picked up a branzino which is a european sea bass. To keep it simple the first time we just stuffed it with some lemon, garlic, rosemary, salt, pepper, and bay leafs. Rubbed the outside with a little olive oil, salt and pepper. Threw it directly over a basket of coals with all vents open for about 7 or so minutes a side. Overall, was a great success! We were really pleased with how it turned out (not fishy at all and good flavor). The only thing next time is figure out a way to get less bones in the bites. After we ate one side of it, we flipped it over and pulled the skeleton out and most the bones came, so will probably try that next time first.

Plated with grilled bread and potato chips/wedges. The wedges have a vinagrette of some sort on them we made. It has olive oil, white wine vinegar, dijon, rosemary, shallot, salt, and pepper. It was amazing, went great on not only the potatoes but the bread and fish!
