Braised sausage and cauliflower

This is actually a combination of recipes from Nick Stellino (sausage) and Lidia Bastianich (cauliflower), and it's a great way to get kids to eat cauliflower. ;)

Clean a head of cauliflower (whatever size you want) but leave as much of the stem as possible. Square the stem so the head stands up.

Stand the head in a pot or Dutch oven that allows for plenty of room at the sides.

Put however many links of Italian sausage you want around the cauliflower.

Pour in as much red sauce as you want; it's OK to submerge the sausage links and have the sauce come up around the head a little.

Cover the pot and simmer/braise until the cauliflower is tender (this will take long enough for the links to cook). Starting about 10 minutes in, spoon some of the sauce over the cauliflower every 5 minutes or so.

Eat. And marvel at how your previously cauliflower-hating children scarf it down.;)

We eat it as is, with the cauliflower taking the place of the pasta.

I've used cauliflower as a pasta substitute in the past as well, just not cooked in the sauce. It's a good alternative for people looking to cut back on carbs.
