Bought a new Genesis E320 !


 
Someone a while ago called Weber and asked that question. The person at Weber said that was an on going debate even at Weber itself. I don't think it makes a big difference but I have mine flat side up.
 
Thin side up is the normal direction for the cast iron grates, but you can do whichever you like...

Any old steel wire bristle grill brush will work fine before and after each cook. You are just looking to knock off any big chunks of food stuck on the grates.
 
May sound stupid but I prefer the look of the flat side up!
I think i'll give this ago and switch if the cooking is influenced negatively!
