Bought (2) 2lb Pork Loins - ended up with (4) 1lb loin strips...

Picked up (2) Hormel 2lb Pork Loins that were labeled as 'Pork Loin'. When I opened them up to prep for the brine I found that each package contained (2) 1 lb pork loin strips pakaged together. Would be a pain if I didn't have a spool of butcher's twine. Just a word to the wise to ask at the counter if in doubt and you need whole tenderloins.

I'm gonna stuff these but kinda have to be extra careful to tie them well.
 
Those would be pork tenderloins, of which "whole" ones would be exactly what you got. A whole pork loin would be about as long as your arm, and about as thick. Watch out, as the Hormel's are often enhanced, which technically means already brined. Look for "Always Tender" on the packaging,
 
Thanks, Doug. I dilluted my brine recipe to 1/2 strength(kosher salt, sugar & garlic).

End result. Sharp cheddar cheese on the left and dried apple/apricot/prune on the right. * BURP *

Good amount for leftovers to freeze.
