Bottom Round Flat

My bro has been buying these things down in Northern Illinois to make Italian beef. It goes by just "flat" when he orders. Around 10# or so and it almost looks like a small packer. I think it is the outer cut of the rear flank and probably also includes the tri-tip. It is boneless. Can anyone confirm?

A BR 'flat' is the same thing as what is known as the outside round. It is from the round (rear leg) primal and does not contain any portion of the flank nor tri-tip, which come from the flank (just below the loin) and the loin (the bottom of the sirloin sub-primal), respectively.

BR flats are pretty lean, having been separated out from the heel and eye, and almost always having the surface connective tissue removed.

i got a few from BJ's when i used to have a membership there. i used one for jerky. man that made a mess of jerky. and i believe it was less than 2/pound then too so that's cheap jerky!!
