Im looking to do a long smoke on what the Americans call "Boston Butt", so i can do pulled pork.
What do i need to ask my butcher for in this country? Some have told me a part of the shoulder and others say that the local restaurants are using the "hand".
Whats the best thing to get?

You should update your profile to note what your location is.

Boston butt is the upper part of the shoulder. The lower part - which is much of the foreleg - is known here as the 'picnic' or an 'arm roast'.

Lee, we have meat charts online that you can print and show to your butcher. In the first pork chart, it's called "Shoulder Butt". In the second, it's called "Boston Butt".
