I'm precookiing a couple of butts to take to the South Carolina shore next week for my mother's 90th birthday and family reunion. The last one I did at around 275 and it turned out perfectly. Is foiling necessary-can't remember if I foiled the last one or not? Thanks again for everyone's help. The butts are going on in an hour or so.

I cook mine high temp most of the time and I don't foil them. See no need they have so much fat that they are always plenty moist. I do foil when I pull them off the smoker to rest. I also put them in a cooler if I need to hold them for several hours. If no need to hold you can rest, pull and refrigerate then reheat for serving.

Butts have been on for four hours and are at 150-should be done before dinner without foil.

PS-Not to self-don't foil butts
