Boneless leg of lamb

That was my first butterflied half lamb leg. We picked it up from Aldis and had a bit of confidence having gotten a rack of lamb there a couple weeks ago.

Big fan of lamb these days after trying it for the first time this month 🤣
Looks great!

This leg turned out great. Pulled it at 130 and rested for ~ 20 minutes. I wasn't a fan of lamb until I met my wife back in the early 80s. Love it now.

Here's before and after pics:

Treat it the same as beef, and you're golden. (If going L&S I would stick with leg or shoulder).
That butterflied leg looks the business!

I have done those rolled up lamb on the rotisserie often enough and I really do like the taste. Shoot, now I have to go get one.
