Bone-In Pork Roast

A 4 pound bone-in pork center loin roast, marinated for 4 hours with Mad Hunky brine, sprayed with olive oil and coated with Plowboys Yardbird rub. The sides will be baked potato, grilled onion, garlic and asparagus.

Potatoes and Roast off the grill. Roast cooked to internal temp of 150. Put the roast direct for about 2 minutes on top trying to burn off some of the excess fat. Next one I do, I will trim the fat cap first. Resting while asparagus cooks.

Asparagus, coated with olive oil and dusted with Northwoods Fire and onto the grill.

Other than the excess fat this was a delicious meal. The roast was moist, and the sides were great.

Thanks everyone for your kind comments. Jim, my portion of the garlic ended up on the onion. My wife got stingy with the rest..
