If it were me i would check with the local authorities governing the sell of food at ur location, just for liability purposes, just in case someone says they got sick with food u never know, better safe than sorry.
 
As my sig suggests. There's nothing better than the marriage of Blues, Brews and BBQ.

I've actually had this discussion with a friend of mine that owns a restaurant. If your doing it on site at his restaurant it shouldn't be a problem. If your cooking it at your place and giving or selling it to him you would be liable if you made anyone sick and it may also be illegal to cook and sell uninspected meat . He should probably check with his insurance company about liability.
