My pork loving kiddo requested pulled pork for her birthday party tomorrow. I went with the quick cook method, because between being on call last night, having a volleyball game and the American heart association heart walk this morning till 1PM, and a full day tomorrow that will need an uninterrupted nights sleep. I have done one butt at a low temp. I went with the method described in the Chris Lily post, and I have to say that it turned out awesome!
Fired up the smoker with RO lump, apple, and a small bit of hickory. Lined but empty water pan. Injected, and rubbed. Placed 15 lbs (untrimmed weight between two) of butt on at 4PM. Cooked at between 275 and 300. Yes, a little high, but I needed to buy time. Foiled at 165, and cooked another 1.25 hours. Pulled at 195, and rested for a little under an hour. Pulled and it tastes great!! Not exactly the same as my long cook, a softer bark, but still quite tasty.
Hope that my princess enjoys the food tomorrow, beecause right now my house smells great!! Will post pix once they are uploaded!
