Big Thanks! 1st Butts!


 
Once again, I have to say thanks to Chris A. and all the members of this great site. My overnight cook is just now finishing and it was a great success! Couldn't have done it without your help!

I'd also like to thank Bryan S. and other members who said DON'T REMOVE THE FAT CAP! Wow! That meat in there is heaven!

Finally, I'd like to say thanks to COSTCO for providing a little slice of the USA right here in Seoul, Korea.

My family and I love the WSM.

The cook's reward, for sure! I cooked with the cap facing down and you can see from my picture that sucker just fell off when I flipped it. Of course it didn't make it inside the house. Well, except in my belly!
 
There are always little jewels of meat somewhere that a lot of people ignore. Like the oysters on the back of a chicken. The false cap. Probably my favourite part of a ribeye is the cap that runs around the top of the roast, it's so flaky and tender and delicious.

I think I've been trimming my butts too much. This is something I'll rectify for sure.
