This Thai barbeque pork is something we make often - I think I've posted a cook of it previously a few years ago, but hey - last night's iteration was tasty so I thought I'd post another.
It's really all about the marinade - Lots of garlic, cilantro, pepper, soy sauce, oyster sauce, sesame oil, sugar, cinnamon and tapioca starch.
We start by smashing the pepper, garlic and cilantro stems in a mortar - then add the mush to the other ingredients and marinate over night.

....pop them on and cook for about a 1/2 hour....
...and done! Served in a broth with mung beans, spinach and egg noodles tossed in garlic oil - topped with garlic chips. So good!
