Bryan.hickory is traditional for pork,but use whatever hardwood you have on hand. Apple is good,oak is good,pecan is good. Let us know what you decide and good luck!
I actually found some pecan chunks today. I would like to use the pecan with one of the fruit woods--- which would be better with the pecan for pork? Apple? I am going to do an overnite smoke. Thanks. Will post pics later.
I second Apple and Pecan...if you can ever get your hands on some Maple Chunks, then go for those...I love a combo of Maple and Apple. Or even smaller chuncks of Maple,Pecan and Apple. I'm all out of Maple and I really miss it!
It's all individual taste. I don't like a big smoke flavor, so I prefer Apple or cherry. I also have quite a bit of maple chunked up which I haven't tried on butts yet.
Man o Man, that's looks good! Great job! I usually use a mix of Hickory and Apple, for my smoke. Me thinkin' about using some oak wood, for this weekend's butt smoke!
