Best charcoal setup for Ribolator... Now they're on and spinning...

Well... the ribolator trays just don't seem to quite fit the weber ring. The corners of one or two trays drag on the expansion ring no matter how I adjust it. I think I'll have to do some slight mods to the trays... maybe just 45 degree cut the outside corners a 1/4 inch or so. I don't think it'd affect the integrity of the tray at all. We'll how this one goes but I'm a bit nervous as even the lids moving a bit.
 
just use your normal charcoal set piling 20 to each side would be agood start. try and keep the temps at about 250-300-you wont need to foil them just cook until a toothpick will pass through like butter and then you done.
 
I've never done ribs over 225-250... never used a ribolator, and never done them on a kettle. This will be interesting.

I'll be starting around noonish or so tomorrow so I'll be grabbing my notebook to document this new method. I might put a two or three racks in the big Brinkman Smoker just in case!
 
Chris, to keep temps low and easy to control in a kettle, cover up 2 of the exhaust vent holes. You will still have plenty of exhaust with the 2 remaining vent holes.
 
Be careful to "Balance" the Ribs so they don't flip over. I would have a tendency of putting in as much as possible, preferably something with low ash. Ribs are going to take awhile. Buy a Guru and your troubles will be over. Enjoy the Ferris wheel.

I think I'm going to put a couple wraps of butcher string around each one just in case. I'm not doing anything today... not a thing. I'm not moving, carrying, lifting, dragging, reaching, or shoving anything. It's just sitting out by the pool watching my ribs (I am gonna put another couple of slabs in my smoker) and drinking a bunch of drinks with more than 2 alchols per recipe. A little string around the trays will probably benefit me.
