Hey guys,

I am getting ready to smoke two 5 lb chickens. The instructions under cooking topics on the website call for 4 hour smoke. However, I found postings in the forum that recommend to smoke chicken for 1 hour 30 minutes. How do you explain the difference? Are they smoking it at different temperatures? Which way is better for the chicken, high temp or low temp?

High heat, cook w/ no water in water pan. Keep temps about 400-425. Those birds should be done in about 1 1/2hrs. They are done when the thigh hits an internal temp of 180 degree's. Pull off and let them rest for about 10 mins.

Yup just different temperatures.

One way isn't necessarily better than the other just different. YOu will find that in order to have chicken skin that is nice and crispy you will need to have nice dry skin and cook at high heat.

I personally cook chicken at 425 for about 45 minutes, I used to cook at 350 but have increased the temp recently.
