I have never had a butt yet turn out black. I have always used rub on mine. I do get a bark, but the color is usually a nice even smokey brown. I have used two different kinds of rubs, one with and one without sugar. I have never smoked above a temp of 240.
I think it's just personal preference. Your rub and finishing sauces are subjective, and if you are trying to accomplish something similar to what someone else does to achieve that finished product that you like so much, it couldn't hurt to ask a few questions on what they are doing.
