Beefed-Up Barley Soup

Received this in a gift basket this past Christmas and fell in love with the stuff. It's called Beefed-Up Barley Soup and put out by a company called Buckeye Beans & Herbs out of Washington state. Very easy to make and has a very unique taste.

First, brown a pound of lean hamburger with whole chopped onion.

With meat browned add 2 cans of Diced Tomatoes (No Salt Added), seasoning and contents, and 10 cups of water.

Bring to a boil.

Let simmer on low for an hour stirring occaisonally and there you have it. Great soup!

Looks good and I'll keep an eye out if I can find it.
Personally I would use Ox-tails or cubed chuck instead of hamburger, cause that's what I know.:)
Curious what are the pale pink things in the mix.. beans of some type?

Tim, The pale things are either barley or lentil don't know which. I had to go to Amazon to order a case of six boxes. I am assuming this is easier to get on the west coast than east. And I had planned sooner or later to try some other beef in the mix. The directions say you can use coarsley chopped stew beef. I should have added that in the directions above.
