Beef Wholesale Prices

Saw a reference to a 40% jump in wholesale costs in a forum post earlier today, and it reminded me of this: the "Beef, It's What's for Dinner" Wholesale Price Update.
I've seen this several times as I've researched cuts of meats. I really don't have any need for the info, I just found it interesting.
There are two sections - one for Choice and one for Select (none for Prime, which is what I think most of us try to use).
Can't really blame the retailers when the price they pay is up a ton over the past year.

Well, the announcement of the president of JBS meat packing paying the ransom is money they will want to recoup some way and raising prices is the easiest way to do it. If some is recovered as is was in the pipeline deal, the prices may not stay as high for as long? Pure speculation on my part but, it’s just the way of most business in this day and age.
